The next recipe is based on an Indian recipe for Mooli!. I first made it at Chanukah but it comes into play at this time of year when I have a glut of radishes in the garden. However it is baked and not fried (you could shallow fry if you wish but can catch with the coconut).
Bet you haven't used radishes like this before. It is an excellent nibble or can be served as an accompaniment to a meal.
500g (1 lb) radishes
250g (8oz) cucumber
125g (4oz) onion
4 tablespoons desiccated coconut
1 teaspoon 5 spice power
½ teaspoon ground mace
Seasoning
3-4 tablespoons of chick pea (gram) flour to bind**
Small pot thick plain yogurt
Chop the radishes, cucumber and onion either finely by hand or process roughly in a food processor. Place in a bowl
Add the coconut and spices together with the seasoning and mix.
Pour in the yogurt and add sufficient chick pea flour to bind into a soft dough like mixture.
Grease a baking tray and place in a hot oven to preheat. Roll the radish mixture into balls.
Place on preheated baking tray squashing down. Cook for 15-20 minutes in the oven at 375ºF, 190ºC, Fan 170ºC, Gas Mark 5 until crispy
** You could substitute a good g/f flour or soya flour if you wish
