Green Quinoa Salad - Naturally Gluten Free


Parve, Vegan, Dairy Free
Serves at least 6

This salad has protein, some fat and of course vegetables so it is perfect for a light lunch or to serve with other dishes.

100g (4oz) quinoa
1 avocado
4 scallions (spring onions)
6 sticks of celery
12 cm (5 inch) cucumber
1 little gem lettuce (or equivalent)
Juice of a lemon
4 tbsp vegetable oil (optional)
Seasoning

Cook the quinoa for 10 minutes in twice its volume of boiling salted water. Drain and rinse to cool.

Chop the onions, avocado and cucumber into bite size pieces. Shred the lettuce. Mix these together with the quinoa. Season, squeeze the lemon over the mix and stir in the oil.

That's it - really simple and very tasty - you can use lime juice its also very good.
