Feeds 8 hungry kids
These are fried and so fit the remit of Chanukah, they are good for the kids - you could add some grated carrot in too. What’s more they are quick can be served with cheese and you know what's in them and I know that virtually every kosher veggie burger has wheat in as I am sure all of you do too.
2 x 410g (apprx 14oz tins of aduki beans)
This is roughly 235g or 8oz of beans per tin when drained
(or soak and cook 300g dried beans)
Large red onion chopped
Tsp chilli sauce
150g (5.5oz) polenta
4 tbsp tomato ketchup
Handful of chopped fresh herbs (thyme, sage, parsley, coriander etc)
Seasoning
Enough boiling water to mix
Oil for frying.
Heat the oil and fry off the onion till soft,
Add the beans, chili, tomato sauce and seasoning,
Cook for a couple minutes mashing ingredients together as you go,
Remove bean mix from pan add the polenta and enough water to make a stiff mix.
Shape into patties and then fry for 2 minutes on each side in a clean pan
Serve with burger buns and some tomato
